  • 8 ounces Rice noodles Use according to package instructions.
Veggies
  • 3 cups Mixed vegetables (e.g., bell peppers, carrots, broccoli) Feel free to use any veggies on hand.
Sauce
  • 1/4 cup Soy sauce
Spices
  • 2 cloves Garlic (optional)
  • 1 teaspoon Ginger (optional)
Toppings
  • 2 tablespoons Cooking oil For frying.
  • 2 stalks Green onions (for garnish)

Preparation
  1. Cook the rice noodles according to package instructions. Drain and set aside.
Cooking
  1. In a large skillet or wok, heat oil over medium-high heat.
  2. Add ground beef and cook until browned.
  3. Add mixed vegetables and stir-fry for a few minutes until tender.
  4. Add garlic and ginger if using, and stir for another minute.
  5. Pour in soy sauce and mix well.
  6. Add the cooked rice noodles to the skillet and toss everything together until well combined.
  7. Garnish with green onions before serving.

Notes

For the best texture, do not overcook the vegetables; they should remain slightly crisp. This dish is customizable—substitute ingredients based on your preferences.
