  • 1 cup Powdered sugar For added sweetness; adjust according to taste.
  • 1 teaspoon Cinnamon Aromatic spice that complements pumpkin.
  • 1/2 teaspoon Nutmeg Freshly grated for best flavor.
  • 1/4 teaspoon Ginger Optional, for added warmth.
For coating
  • 1/2 cup White chocolate chips or coating For dipping; use dark chocolate for a different flavor.

Method
 

Preparation
  1. Combine the pumpkin puree and softened cream cheese in a mixing bowl until smooth.
  2. Add graham cracker crumbs, powdered sugar, cinnamon, nutmeg, and ginger to the bowl and mix until well incorporated.
  3. Chill the mixture in the refrigerator for about 30 minutes to make it easier to handle.
  4. Once chilled, scoop out small portions of the mixture and roll them into balls.
  5. Melt the white chocolate chips according to package instructions.
  6. Dip each truffle into the melted chocolate, then place on a parchment-lined baking sheet.
  7. Refrigerate until the chocolate is set, about 1 hour.
