  • 2 cups Pasta (penne or rotini) Any pasta can be used as a substitute, such as fusilli or farfalle.
Chicken Ingredients
  • 1 lb Chicken breast, diced Boneless, skinless chicken thighs can be used for more flavor.
Seasoning and Broth
  • 1 packet Ranch seasoning mix You can make your own blend if preferred.
  • 2 cups Chicken broth Vegetable broth can be used for a vegetarian version.
  • 1 tablespoon Olive oil Can substitute with butter for a richer taste.
  • To taste Salt and pepper Adjust according to preference.
Cheese and Garnish
  • 1 cup Shredded cheddar cheese Mix with mozzarella for a different cheese experience.
  • For garnish Chopped parsley (optional) Fresh basil or chives work well as alternatives.

Preparation
  1. In a large pot, heat olive oil over medium heat.
  2. Add diced chicken and season with salt, pepper, and ranch seasoning. Cook until chicken is browned.
  3. Stir in pasta and chicken broth, bringing to a boil.
  4. Reduce heat, cover, and simmer for about 10-12 minutes, or until pasta is tender and the liquid is mostly absorbed.
  5. Remove from heat, stir in shredded cheddar cheese until melted.
  6. Optionally, garnish with chopped parsley before serving.

Notes

Make sure to brown the chicken properly to enhance its flavor. Stir the pasta occasionally while it simmers to prevent sticking. For an extra cheesy finish, sprinkle additional cheddar cheese on top just before serving. Consider adding vegetables like spinach or bell peppers for added nutrition and flavor. If the dish appears too dry, add a splash more chicken broth to achieve your desired consistency. For a little heat, try incorporating some crushed red pepper flakes into the mix.
