Ingredients
  

Pasta
  • 8 ounces pasta (spaghetti or penne)
Veggies
  • 2 medium zucchinis, sliced
Sauce
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
Spices
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Toppings (Optional)
  • 1/4 cup grated Parmesan cheese Optional, can be omitted for dairy-free version
  • Fresh basil, for garnish Optional

Method
 

Cooking Pasta
  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
Cooking Zucchini
  1. In a large skillet, heat olive oil over medium heat. Add sliced zucchinis and cook for about 5 minutes until they start to soften.
  2. Stir in the minced garlic, salt, and pepper, and cook for another 2-3 minutes until fragrant.
Combining Ingredients
  1. Add the cooked pasta to the skillet, tossing to combine with the zucchini.
  2. If desired, sprinkle grated Parmesan cheese on top and mix well.
  3. Serve warm, garnished with fresh basil if using.

Notes

Ensure the pasta is cooked al dente for the best texture. Store leftovers in an airtight container for up to 3 days. Reheat gently on the stove with a splash of water to keep it moist.
