Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, cream together the butter, sugar, and brown sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In another bowl, combine the flour, baking soda, and salt; gradually add to the creamed mixture.
  5. Fold in the diced peaches and white chocolate chips.
  6. Drop dough by tablespoon onto the prepared baking sheets.
Baking
  1. Bake for 12-15 minutes, or until the edges are golden brown.
  2. Allow cookies to cool on the baking sheet for a few minutes before transferring to wire racks to cool completely.

Notes

Use ripe peaches for the best flavor and sweetness. Store cookies in an airtight container to maintain freshness for several days. Feel free to experiment by adding nuts for an extra crunch or swapping white chocolate chips for dark chocolate ones. For a dairy-free version, substitute butter with coconut oil and use dairy-free chocolate chips.
