Preparation
- In a medium microwave-safe bowl, melt the white chocolate chips in the microwave, stirring every 30 seconds until smooth.
- In a mixing bowl, combine softened cream cheese, crushed pineapple, shredded coconut, and vanilla extract. Mix until well combined.
- Pour the melted white chocolate into the mixture and mix until fully incorporated.
- Add crushed graham crackers to the mixture and stir until combined.
- Chill the mixture in the refrigerator for about 30 minutes.
Forming the Truffles
- Once chilled, scoop the mixture with a cookie scoop and roll into balls.
- If desired, roll the truffles in additional shredded coconut for coating.
- Place the truffles on a parchment-lined tray and refrigerate until firm.
- Serve cold and enjoy your tropical treat!
Notes
Store in an airtight container in the refrigerator for up to a week. These truffles can also be frozen for up to three months.
