  • 1 cup white chocolate chips Melt in the microwave, stirring every 30 seconds.
  • 1 teaspoon vanilla extract
Textures
  • 1/4 cup shredded coconut
  • 1/2 cup crushed graham crackers You can substitute with crushed cookies or nuts.
Optional
  • Additional shredded coconut for coating Optional for rolling the truffles.

Preparation
  1. In a medium microwave-safe bowl, melt the white chocolate chips in the microwave, stirring every 30 seconds until smooth.
  2. In a mixing bowl, combine softened cream cheese, crushed pineapple, shredded coconut, and vanilla extract. Mix until well combined.
  3. Pour the melted white chocolate into the mixture and mix until fully incorporated.
  4. Add crushed graham crackers to the mixture and stir until combined.
  5. Chill the mixture in the refrigerator for about 30 minutes.
Forming the Truffles
  1. Once chilled, scoop the mixture with a cookie scoop and roll into balls.
  2. If desired, roll the truffles in additional shredded coconut for coating.
  3. Place the truffles on a parchment-lined tray and refrigerate until firm.
  4. Serve cold and enjoy your tropical treat!

Notes

Store in an airtight container in the refrigerator for up to a week. These truffles can also be frozen for up to three months.
