Ingredients
  

Potatoes
  • 2 cups potatoes (Russets or other starchy potatoes) Boiled until fork-tender
Cheese
  • 1 cup cheese (Mozzarella or cheddar, shredded)
Fats
  • 2 tablespoons butter Adds richness
Spices
  • 1 teaspoon salt
  • 1 teaspoon pepper
Coating
  • 1 cup all-purpose flour For coating
  • 2 large eggs Lightly beaten
  • 1 cup breadcrumbs Panko for extra crunch
Oil
  • 2 cups vegetable oil Neutral oil for frying

Method
 

Preparation
  1. Boil the potatoes until fork-tender, then drain and mash them in a large bowl.
  2. Add the shredded cheese, butter, salt, and pepper to the mashed potatoes. Stir until well combined.
  3. Scoop out small portions of the mixture and shape them into balls.
Breading
  1. Set up a breading station with flour, beaten eggs, and breadcrumbs.
  2. Dip each ball first in flour, then in egg, and finally coat with breadcrumbs.
Frying
  1. Heat vegetable oil in a large skillet over medium-high heat.
  2. Fry the croquettes in batches until golden brown and crispy, about 3-4 minutes per side.

Notes

Be sure to drain the potatoes well after boiling to avoid a soggy mixture. For extra crunch, consider doubling the breadcrumbs.
