Ingredients

Main Ingredients
  • 1 lb Ground beef, use 80/20 for flavor, or ground turkey for a leaner option
  • 1 packet Taco seasoning, use homemade blend for lower sodium or half packet for milder heat
  • 1 cup Shredded cheddar cheese, sharp cheddar for punch, Monterey Jack for creamier melt
  • 1 cup Ranch dressing, use light ranch or Greek yogurt ranch for fewer calories
  • 24 cups Mini tortilla cups, store-bought mini cups for speed, tostada scoops as a crunchier alternative

Method

Preparation
  1. Preheat the oven to 350°F (175°C) before you start assembling the bites to ensure even baking.
  2. Place the mini tortilla cups on a baking sheet lined with parchment for easy cleanup and stable assembly.
Cooking the Filling
  1. Heat a skillet over medium heat and add the ground beef, crumbling it as it cooks for even browning.
  2. Cook the ground beef until browned, stirring occasionally to break up larger pieces and promote even cooking.
  3. Drain excess fat thoroughly, using a spoon or a heatproof colander to remove pooled grease safely from the skillet.
  4. Mix in the taco seasoning according to package instructions, adding the suggested water and simmering briefly to concentrate flavors.
Assembling and Baking
  1. Fill each mini tortilla cup with a spoonful of the seasoned beef, leveling the meat to create an even base for the cheese.
  2. Top each filled cup with shredded cheddar cheese, distributing the cheese evenly for uniform melting across all bites.
  3. Bake in the preheated oven for about 10 to 12 minutes until the cheese is fully melted and the cups are heated through.
  4. Remove the baking sheet from the oven carefully, letting the bites rest briefly to avoid burning while finishing touches are added.
  5. Drizzle with ranch dressing right before serving to preserve its cool texture and tangy contrast with the hot filling.

Notes

Brown the meat thoroughly for deeper flavor. Season conservatively and taste. Distribute cheese uniformly for consistent melt. Keep ranch chilled until serving for best texture.
