  • 8 oz spaghetti
Veggies
  • 2 cups cherry tomatoes Fresh, to be roasted.
Sauce
  • 1/4 cup garlic confit Can substitute with minced garlic.
  • 2 tbsp olive oil
Herbs
  • Fresh basil leaves To taste.
Spices
  • Salt To taste.
  • Pepper To taste.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Toss cherry tomatoes with olive oil, salt, and pepper; spread on a baking sheet.
  3. Roast for about 20 minutes until soft.
  4. Meanwhile, cook spaghetti according to the package directions until al dente.
Assembly
  1. In a large bowl, combine the cooked spaghetti, roasted cherry tomatoes, garlic confit, and fresh basil.
  2. Toss to combine and serve immediately.

Notes

For extra depth, use homemade tomato-ricotta pasta sauce. Roast the tomatoes until they're blistered for maximum sweetness. Reserve some pasta water to adjust the sauce's consistency. Serve immediately for the best texture and flavor.
