Veggies
  • 1 large red bell pepper (diced)
  • 1 large zucchini (thinly sliced and patted dry) Ensure it's patted dry to avoid excess moisture.
  • 2 large ears of corn (kernels removed from cooked cobs)
Cooking Essentials
  • 1 tablespoon olive oil
Spices
  • ½ teaspoon chili powder
Toppings
  • ¼ cup chopped fresh cilantro

  1. Heat olive oil in a cast-iron skillet over medium heat.
  2. Add diced red bell pepper and zucchini to the skillet. Sauté for 5-7 minutes until slightly softened.
  3. Fold in the cooked sausage, then sprinkle the chili powder. Cook for an additional 4-5 minutes to heat through.
  4. Incorporate the corn kernels and chopped cilantro, stirring to coat. Cook for 2-3 minutes.
