  • 1 lb ground turkey (93% lean)
Vegetables
  • 1.5 lb zucchini, diced
  • 0.5 cup chopped onion
  • 2 cloves garlic, minced
  • 0.5 cup fresh basil, finely chopped
Rice/Grains
  • 2 cups cooked groats
Sauce
  • 1 can diced tomatoes
Spices
  • 0.5 tsp smoked paprika
  • 0.5 tsp oregano
Toppings
  • 7 oz cheddar cheese, shredded
  • 2 tbsp olive oil

Method
 

Preparation
  1. Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).
  2. Heat a large skillet over medium-high heat and add olive oil. Add the ground turkey, cooking and breaking it apart until browned.
  3. Add the chopped onion and minced garlic to the skillet. Cook for 2 minutes until fragrant and softened.
  4. Add the diced zucchini and continue cooking for 3-4 minutes until slightly softened.
  5. Stir in the cooked groats, diced tomatoes, oregano, smoked paprika, chopped basil, and half of the shredded cheddar cheese until fully combined.
  6. Coat a 9×13 baking dish with cooking spray and spread the mixture evenly into the dish.
  7. Sprinkle the remaining shredded cheese on top.
Baking
  1. Bake uncovered for 20-25 minutes until the cheese is bubbly and lightly golden.
  2. Remove from the oven and let cool for a few minutes before serving.

Notes

Make sure to cook the turkey well to ensure it has great flavor. You can adjust the cooking time based on your oven's performance for perfect doneness. Allow it to cool slightly before serving to enhance the flavors and make serving easier. Store any leftovers in an airtight container in the fridge for up to five days for a quick meal option.
