Preparation
- In a slow cooker, add the chicken, broth, sliced carrots, sliced celery, diced onion, minced garlic, and dried thyme.
- Season the mixture with salt and pepper to taste.
- Set the slow cooker to low for 6-8 hours or high for 3-4 hours, allowing the flavors to meld and the chicken to cook through.
- About 30 minutes before serving, add the egg noodles to the slow cooker.
- Once cooked, shred the chicken directly into the soup and stir to combine everything well.
- Serve the soup hot, garnished with fresh parsley if desired.
Notes
Use low-sodium chicken broth to control the saltiness of the final dish. For a more robust flavor, consider adding bay leaves and peppercorns during cooking, then removing them before serving. Don’t skip the resting time after shredding the chicken; letting it sit in the soup allows the flavors to blend better. If you prefer a thicker soup, mix a cornstarch slurry in with the broth before cooking. For an extra flavor layer, sauté the onions and garlic before adding them to the slow cooker.
