  • 1 tablespoon Cumin Provides a warm, earthy flavor.
  • 1 tablespoon Oregano Use dried or fresh.
  • 1 teaspoon Salt Adjust according to preference.
  • 1 teaspoon Black pepper Freshly ground gives better flavor.
  • 1/4 cup Olive oil Extra virgin olive oil works well.
  • 1 Onion, sliced Adds sweetness.
  • 1 Bell pepper, sliced Use red, yellow, or green.

Method
 

Preparation
  1. Mix orange juice, lime juice, minced garlic, cumin, oregano, salt, and black pepper in a bowl.
  2. Place the pork shoulder in the crockpot.
  3. Pour the marinade over the pork to ensure it’s well-coated.
  4. Add sliced onions and bell peppers on top of the pork.
  5. Drizzle olive oil over the mixture for added richness.
  6. Cover the slow cooker and cook on low for 8 hours or until the pork is tender.
  7. Shred the pork and serve with the cooked vegetables.

Notes

For maximum flavor, marinate the pork shoulder overnight before cooking. Use fresh herbs for an aromatic touch; they enhance the overall taste. Opt for a bone-in pork shoulder for added richness and moisture. For a spicy kick, incorporate diced jalapeños or hot sauce into the marinade.
