  • 3 cloves Garlic, minced Fresh garlic preferred
  • 1 tablespoon Olive oil Can use vegetable oil
  • 1 teaspoon Salt Adjust to taste
  • 1 teaspoon Black pepper Freshly ground for best flavor
  • 1 teaspoon Thyme Fresh or dried
  • 1 Bay leaf Enhances the flavor profile

  • Sausage Smoked sausage pairs beautifully, add to taste
  • Green onions For garnish, adds freshness

Method
 

Phase 1: Preparing the Base
  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and minced garlic, and sauté until translucent.
Phase 2: Cooking the Chicken
  1. Add chicken pieces to the pot and brown on all sides.
  2. Pour in chicken broth and bring to a boil.
Phase 3: Bringing it All Together
  1. Stir in the rice, salt, pepper, thyme, and bay leaf.
  2. Reduce heat to low, cover, and simmer for about 30 minutes or until chicken is cooked through and rice is tender.
  3. If using, add sliced sausage during the last few minutes of cooking.
Phase 4: Final Touches
  1. Remove chicken, shred it, and return to the pot.
  2. Serve hot, garnished with green onions and parsley if desired.

Notes

For best results, use a whole chicken for flavor, brown the chicken well, and consider adding diced bell peppers for sweetness. Simmer uncovered for the last 10 minutes to enhance the rice's flavor absorption.
