Phase 1: Preparing the Base
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and minced garlic, and sauté until translucent.
Phase 2: Cooking the Chicken
- Add chicken pieces to the pot and brown on all sides.
- Pour in chicken broth and bring to a boil.
Phase 3: Bringing it All Together
- Stir in the rice, salt, pepper, thyme, and bay leaf.
- Reduce heat to low, cover, and simmer for about 30 minutes or until chicken is cooked through and rice is tender.
- If using, add sliced sausage during the last few minutes of cooking.
Phase 4: Final Touches
- Remove chicken, shred it, and return to the pot.
- Serve hot, garnished with green onions and parsley if desired.
Notes
For best results, use a whole chicken for flavor, brown the chicken well, and consider adding diced bell peppers for sweetness. Simmer uncovered for the last 10 minutes to enhance the rice's flavor absorption.
