  • 4 cups crisp spring greens (mixed varieties, such as arugula, spinach, or butter lettuce)
Cheese
  • 8 oz goat cheese (cut into 1/2-inch rounds)
Fruits/Veggies
  • 1 cup strawberries or radishes (sliced)
Nuts
  • 1/2 cup toasted almonds (chopped)
Sweetener
  • 2 tablespoons honey (adjust to taste)
Dressing
  • to taste lemon vinaigrette (prepared with fresh lemon juice, olive oil, salt, and pepper)

Method
 

Preparation
  1. Whisk together lemon juice, olive oil, salt, and pepper in a bowl until well combined.
  2. On a plate, create a lovely base using the crisp spring greens.
  3. In a skillet, heat the goat cheese until golden brown on both sides, about 2-3 minutes per side.
  4. Place the crispy goat cheese rounds on top of the arranged greens.
  5. Top the salad with sliced strawberries or radishes for a pop of color and flavor.
  6. Evenly sprinkle the toasted almonds over the salad for added crunch.
  7. Finish by drizzling honey over the top of the salad and serve immediately.

Notes

Make the lemon vinaigrette ahead of time to save prep time. Serve the salad immediately after assembling for the best texture and freshness. Store leftover salad separately from the dressing.
