  • 1 lb steak, diced Use ribeye or sirloin for best flavor.
Rice/Grains
  • 1 cup cooked rice
Veggies
  • 1 each bell pepper, diced
  • 1 each onion, diced
Sauce
  • 1 cup queso cheese Substitute with shredded cheddar or dairy-free alternative if desired.
  • 1 tablespoon olive oil
Spices
  • Salt and pepper to taste
Toppings
  • Sour cream, salsa, cilantro Optional toppings.

Method
 

Preparation
  1. Heat olive oil in a skillet over medium-high heat.
  2. Add the diced steak, onions, and bell peppers, cooking until the steak is browned and the vegetables are tender.
  3. Season with salt and pepper to taste.
  4. Stir in the cooked rice and queso cheese, mixing until the cheese is melted and everything is well combined.
  5. Serve hot, topped with sour cream, salsa, and cilantro if desired.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. If reheating, add a splash of water to maintain moisture. For added variety, swap proteins or add different veggies.
