Ingredients
  

Veggies
  • 4 cups baby spinach leaves Fresh and organic preferred
  • 1 cup fresh strawberries, sliced Use ripe strawberries for best flavor
  • 1/4 cup red onions, sliced thinly Adjust amount to taste
Nuts
  • 1/2 cup almonds or walnuts, chopped Chop just before serving for crunch
Cheese
  • 1/2 cup feta cheese, crumbled Can substitute with goat cheese
Dressing
  • 1/4 cup balsamic vinaigrette or poppy seed vinaigrette Dress salad just before serving

Method
 

Preparation
  1. In a large bowl, combine baby spinach, sliced strawberries, sliced red onions, and chopped almonds or walnuts.
  2. Add crumbled feta cheese on top.
  3. Drizzle with balsamic vinaigrette or poppy seed vinaigrette.
  4. Toss gently to combine.
  5. Serve immediately or refrigerate for later.

Notes

Storage: Store leftovers in an airtight container in the fridge for up to 3 days. Optional: Top with avocado slices for creaminess.
