Preparation
- Preheat the oven to 425˚F.
- Cut 4 sheets of foil, each measuring 12x12 inches.
- In a large mixing bowl, stir together the steak, shrimp, tomatoes, red onion, garlic, Old Bay seasoning, thyme, cumin, salt, pepper, and olive oil.
Cooking
- Divide the prepared mixture evenly between each foil sheet.
- Wrap and seal the foils tightly around the food.
- Place the foil packs on a large baking sheet, pop them in the oven, and cook for 15 minutes, or until the internal temperature of the steak registers at 130˚F.
- Carefully open each foil packet away from your face, garnish with fresh parsley and green onions, and serve with lime wedges.
Notes
Ensure all ingredients are fresh for the best flavor and texture. Use heavy-duty aluminum foil to avoid tears during cooking. Experiment with additional vegetables like bell peppers or zucchini for variety. Serve with a side of rice or a salad for a complete meal.
