  • 2 Oranges (juiced and zested) Use fresh oranges for the best flavor.
  • 2 tablespoons Soy sauce Feel free to use low-sodium soy sauce.
  • 1 tablespoon Honey Maple syrup can be used as a substitute.
  • 1 tablespoon Olive oil Any cooking oil works.
  • 2 cloves Garlic (minced)
  • 1 teaspoon Ginger (minced) Fresh ginger is recommended.
  • 1 Bell pepper (sliced) Any color bell pepper is fine.
  • Salt and pepper To taste.
  • For serving Cooked rice Use any preferred grain.
  • For serving Green onions (for garnish) Chopped.

Method
 

Preparation
  1. In a large skillet, heat olive oil over medium heat. Add minced garlic and ginger, and sauté for about 1 minute.
  2. Add the ground chicken to the skillet, cooking until browned and cooked through, about 5-7 minutes.
  3. Stir in the bell pepper and cook for another 3-4 minutes until tender.
  4. In a small bowl, mix the orange juice, orange zest, soy sauce, and honey. Pour this mixture over the cooked chicken.
  5. Cook for an additional 2-3 minutes, stirring until the sauce thickens slightly.
  6. Season with salt and pepper to taste.
  7. Serve over cooked rice and garnish with chopped green onions.

Notes

Always use fresh oranges for juicing and zesting to maximize the flavor. Adjust the amount of honey depending on your preference for sweetness. Cooking rice in chicken broth can enhance the flavor of the dish when served together. Pair this dish with a refreshing salad, such as a BBQ chicken sweet potato bowl, to complete the meal.
