  • 1 cup Feta cheese Crumbled; can substitute with goat cheese for a different flavor.
  • 2 cups Cherry tomatoes Any variety, but sweet ones are recommended for best flavor.
  • 2 tablespoons Olive oil Extra virgin for richer taste.
  • 2 cloves Garlic Minced; use fresh garlic for best results.
  • To taste Salt and pepper Choose freshly ground pepper for added flavor.
  • for garnish Fresh basil Adds freshness to the final dish.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  3. Place the squash halves on a baking sheet, cut side up. Drizzle with olive oil, and season with salt and pepper.
  4. In a bowl, toss cherry tomatoes with minced garlic, and place them in the center of each squash half.
  5. Crumble feta cheese on top of the tomatoes.
  6. Bake in the preheated oven for 30-40 minutes, until the squash is tender.
  7. Remove from the oven and use a fork to scrape out the spaghetti-like strands from the squash.
  8. Serve warm, garnished with fresh basil.
