Preparation
- Preheat the oven to 400°F (200°C).
- Cut the spaghetti squash in half lengthwise and scoop out the seeds.
- Place the squash halves on a baking sheet, cut side up. Drizzle with olive oil, and season with salt and pepper.
- In a bowl, toss cherry tomatoes with minced garlic, and place them in the center of each squash half.
- Crumble feta cheese on top of the tomatoes.
- Bake in the preheated oven for 30-40 minutes, until the squash is tender.
- Remove from the oven and use a fork to scrape out the spaghetti-like strands from the squash.
- Serve warm, garnished with fresh basil.

Choose a well-ripened spaghetti squash for the best flavor and texture. Enjoy leftovers by mixing in cooked pasta for a quick meal.
