  • Salt and Pepper Use freshly ground pepper for a robust flavor.

  1. Prepare the tortellini according to package instructions. Drain and set aside.
  2. In a large skillet, cook the pancetta or bacon over medium heat until crispy. Add minced garlic and sauté for an additional minute.
  3. In a bowl, whisk together the eggs and Parmesan cheese until fully combined.
  4. Add the cooked tortellini to the skillet with bacon, and then remove from heat. Quickly pour the egg mixture over the hot tortellini, tossing to coat.
  5. Season with salt and pepper to taste. Serve immediately, garnished with fresh parsley.

Use fresh tortellini for the best flavor and texture. Ensure the skillet is hot enough to cook the garlic and pancetta properly. Whisk the eggs and cheese vigorously to create a smooth sauce.
