Ingredients

  • 1 pound ground beef Cook until fully browned.
Canned Goods
  • 1 can (10 ounces) Rotel tomatoes with green chilies
  • 1 can (15 ounces) black beans (optional) Only if desired.
Dairy
  • 1 package (8 ounces) cream cheese
  • 1 cup shredded cheddar cheese
Spices
  • 1 teaspoon taco seasoning (optional) Add for extra flavor.

Preparation
  1. In a skillet over medium heat, cook the ground beef until fully browned. Drain excess fat.
  2. In a slow cooker, combine the cooked ground beef, Rotel tomatoes, cream cheese, cheddar cheese, and black beans if using.
  3. Stir in the taco seasoning for extra flavor, if desired.
Cooking
  1. Cover and cook on low for 2-3 hours, stirring occasionally until the cheese is melted and everything is combined.
Serving
  1. Serve warm with tortilla chips.

Notes

For a creamier texture, add more cream cheese or sour cream. Keep an eye on the slow cooker; if it’s cooking too quickly, lower the heat. Store leftovers in an airtight container for up to three days. Reheat gently on the stove or in the microwave to maintain creaminess.
